In Bangkok, the central plains and the Gulf coast there is a concentration of rice, noodles and the key sauces, such as fish, soy and bean sauce, which constitute the main flavourings. Moving to the mountains north, the flavours are usually hot, thanks to garlic, chillies, pickle and preserves. Next, the north eastern region supplies all the basic herbs including the citrus flavours of lemon grass, kaffir limes and tamarind that give so many Thai dishes their tangy edge. Down south, along the isthmus, we discover the sweet flavours - exotic cooking fruits, palm sugar at Petchaburi and coconut on the island of Koh Samui food which include sweet and savoury combinations.
Our traditional Thai food is certainly full-flavoured; soups sparkle with chilli and lemongrass and curries are rich with aromatic and spicy tastes. There is no bland compromised cooking at our establishment, but those with a less fiery palate shouldn't be put off as all dishes are cooked to order and so the heat can be turned down!
